Sweet Lotus Root

冰糖蜜蓮藕 Sweet Lotus root. Lotus root is a superfood that provides lots of healthy benefits and is widely consumed in Asian cuisines.
Lotus root stuffed with sticky rice is a fine gourmet appetizer from southern China. Sticky rice soak in water over 2 hours, drain then stuff into the air chambers of each section of lotus roots. Chopstick comes in handy to push down the grains in the little holes of lotus roots. Simmer the roots for 3 hours until soft then add crystal sugar to sweeten and continu simmering for another 1 hour to until the soup is thickened. When the cooking is done, remove the lotus roots from the syrup, let cool down and slice to serve. .
