Soft Heart

心太軟 Soft Heart. This is a dessert created by a Shanghainese chef than become an instant heat. The red dates are crispy on the skin, sweet and full of aroma after lightly sautéed, the core is soft yet a bit chewy. You really need to taste it yourself to discover the amazing flavor yet enjoy the “wow” when savoring it.  Dried dates are reconstituted (keep the water for later), pitted then stuffed with dough made from sticky rice flour. Fry them with low temperature until the dough is formed then remove from oil. Simmer the water used to soak red dates and add sugar as desired to make syrup. Plate the red dates then pour the syrup to serve. Enjoy!
