Prawns fried with minced garlic, sprinkle of rice wine, salt and two-pepper powders. I love the pungent flavor of freshly grounded Sichuan peppercorns. Mixing grounded Sichuan peppercorns with white pepper powder and fine salt is the secret to brighten up the dish.  


Traveling around the world, I’ve seen how those Chinese take out mislead people’s perception about Chinese food. Wok fried, heavy seasoned with soy sauce and MSG, cornstarch thickened at all time is not authentic Chinese cooking.
